Upgrade Apache POI to 6.x to benefit from the latest features, performance improvements, and security fixes.

⚠️ Key Breaking Changes

  1. JDK Requirement: Minimum version raised to JDK 17 (was JDK 8 in 5.x).
  2. API Removal: Methods marked as @Deprecated in 5.x have been completely removed.
  3. Behavior Change: DataFormatter now uses cached values for formula cells by default.
  4. Dependency Upgrades: Major upgrades to xmlsec, bouncycastle, commons-*, etc. (JPMS users require explicit module resolution).
  5. Stricter Parsing: Corrupted or malformed xlsx/docx files will be rejected outright, which may affect edge-case tests or legacy file handling.
