v0.3 client returns an empty status message and provider when they are unset

Beschreibung
What happens
A v1 client talking to a v0.3 gRPC or REST server gets a task whose status has an empty message (no id, no parts, role agent) when the server sent none. An agent card with no provider comes back with an empty one.
Why
FromProto.task_status and FromProto.agent_card (compat/v0_3/proto_utils.py) convert status.update and card.provider without checking HasField, so proto3 defaults come through. Same pattern as #1321.
