[FEAT] Add excimer to enable profiling

Wanted change
Excimer is required for using the built-in request profiler as described here: https://docs.nextcloud.com/server/stable/admin_manual/configuration_server/config_sample_php_parameters.html#profiling-request
It would be great if it was installed per default in your nextcloud container image.
Reason for change
I use this image since the official nextcloud image is not usable for me on k8s.
This is because the official image uses rsync to copy the nextcloud code which doesn't work well with network storages.
The install process has improved, but my nextcloud is still slow...
I now want to use the built-in profiler to find out why, but excimer is not installed.
Proposed code change
Install the php84-pecl-excimer package to allow profiling nextcloud.
