Research direction

Start by comparing the remaining CI jobs with the linked pull request, https://github.com/uutils/coreutils/pull/15024, and identify which jobs use ubuntu-26.04. Check how those jobs select system coreutils and run the relevant CI tests. Done means every remaining affected job uses GNU coreutils and the tests no longer run against uutils by default.

Description

Similar to https://github.com/uutils/coreutils/pull/15024, we should ensure that GNU coreutils is the system coreutils in the remaining CI jobs.

ubuntu-26.04 uses uutils as the default system coreutils, which can cause tests to run against uutils instead of GNU. This can lead to unexpected failures or compatibility issues.
