CI/CD enhancement github_actions good first issue

Description

There is a warning in the actions:

Due to capacity constraints, jobs targeting macOS arm64 runners may experience longer queue times.

Currently we are checking for all python versions from 3.9 up to the current latest (3.15) which means 7 different jobs for macOS only.

The number of jobs must be reduced in order to avoid situations where a PR is blocked due to one of the 7 jobs experiencing longer queue times.

Suggestion

My suggestion would be to enable 3 jobs on macOS only, which contain the oldest python version we support (3.9) and the last 2 python releases we cover (in this case, 3.14 and 3.15).
This is only a suggestion and can be changed.
