Material のソートコンポーネントとそのテストから始め、別の列に有効なソート方向が設定されているとき、未ソートのヘッダーにマウスを乗せた際のヒント矢印の動作を追います。ヒントの方向を、ヘッダーに設定された開始方向（matSortStart、デフォルトは asc）と比較します。クリック前に Fat 列のヒントが上向きで、クリックによって設定される方向と一致すれば完了です。

Description
The hint arrow on an unsorted header uses the table's current direction, but a click sorts that header in its start direction (matSortStart, asc by default).
Last worked as expected on v18. Which can be seen on the docs page.

Reproduction
This can be reproduced on the docs page.

- Sort the Calories column desc.
- Hover the Fat column.
- Note the direction of the hover hint arrow.
- Click the Fat column to sort.
- NOT sorted how the hint from three (3) suggested it would be.
Expected Behavior
At step three in the reproduction description, the hover hint arrow should be pointed up.
Actual Behavior
At step three in the reproduction description, the hover hint arrow is pointed down.
