Nginx monitoring in k8s

Description

In the repo: https://github.com/ever-co/dev-pulumi
We need to add one new GitHub action to do the required changes/configs in the k8s clusters in DigitalOcean and enable Grafana / metrics for Nginx, etc. Basically, I think Graphana / Prometheus should already be installed as add-ins into our DO k8s clusters, but we need to make sure we have metrics enabled for Nginx and we can see dashboards with those metrics etc.
Very important would be to not f..ckup nginx that we already use
Maybe a good idea will be to create a test k8s cluster and do all configs there first with that CI/CD, etc, and when all works, switch to our current clusters and do the same.
We can call that cluster "k8s-devops" for example, and run it absolute minimal config, etc
Note: that is not a priority task at all.
