The payload names no files, tests or entry points, so start by finding the existing split-state and committable classes in the Iceberg lake plugin and the 1.10 plugin's read path. Before any code, the schema for the new v2 format needs to be agreed with maintainers, since the issue asks for a documented schema and golden test files. Done means old-format and new-format files both read correctly and new writes produce the v2 format, verified by those golden tests.

Description
A Fluss-owned v2 format with a documented schema and golden test files. The 1.10 plugin reads the old and new formats and writes the new one. The write result and committable move to the new format too. This is the basis of savepoint migration.
