fix upstream new feature visualization
Proposed new feature or change:

In https://github.com/UXARRAY/uxarray/pull/1554, matplotlib was constrained to <3.11. This is fine as a temporary fix but prevents anyone wanting to use the latest matplotlib from also using uxarray. This is an issue for E3SM-Unified, which is planning to use the latest matplotlib in its next release.

Is there an effort to relax the constraint?
