chore(nifi): Update major/minor versions for 26.11.0

Start with boil-config.toml and the listed NiFi version changes, then inspect the referenced nifi-iceberg-bundle and nifi-opa-authorizer-plugin release requirements. Check operator tests, demos, and test-definition.yaml for old versions; use the provided boil build and scripts/run-tests commands. Done means the image builds, applicable tests pass, related PRs and release notes are linked, and all acceptance items are checked.

• Update boil-config.toml to reflect the agreed upon versions in the spreadsheet (including the removal of old versions).
• Update boil-config.toml to the latest supported version of JVM (base and devel).
• Update other dependencies if applicable (eg: jmx_exporter, kcat, scala, etc).
• Check other operators (getting_started / kuttl / supported-versions) for usage of the versions. Add the PR(s) to the list below.
• Update the version in demos. Add the PR(s) to the list below.
