Description

By far the most requested feature is adding extra metadata fields to strip (#58 #72 #78 #85). A more scalable approach would be using a (configurable) list of metadata fields to keep.

Research direction
Review the existing metadata stripping logic in nbstripout (likely in the main Python module). Check the linked issues #58, #72, #78, #85 for user requests and discussions on which fields to keep. Implement a configurable allowlist, possibly via command line argument or config file. Ensure backward compatibility and add tests.
