We use CloudEvent to wrap our kafka messages. As a result, we are seeing encoded values in Provectus, that we are unable to read. Here is link to CloudEvent library - https://cloudevents.github.io/sdk-java/kafka.html.

Investigate the CloudEvent SDK for Java (https://cloudevents.github.io/sdk java/kafka.html) to understand how to integrate custom serde for Kafka messages. Look at existing Kafka serialization/deserialization implementations in the kafka ui codebase, particularly in the message viewing module. Consider how to allow users to select CloudEvent format when viewing messages. Review comments in the issue for additional details and any maintainer input.
