Description

Currently, the "Last updated" column (corresponding to the maximum_timestamp property from the Data stream stats API) is disabled in serverless because the stats API was made internal-only and its results shouldn't be displayed to end-users in serverless. However, the maximum_timestamp property was now added to the Get data stream API (see https://github.com/elastic/elasticsearch/pull/112303), which means that we can utilize this property and display the "Last updated" column in serverless.

Research direction
The issue aims to enable the 'Last updated' column in Serverless Data streams table by switching from the internal only stats API to the public Get data stream API (see elastic/elasticsearch#112303). The previous disabling PR (elastic/kibana#186420) should be referenced. The implementation likely involves modifying the Data streams table component to fetch the 'maximum timestamp' property from the new API endpoint. No existing PRs or maintainer clarifications are present, but the issue is assigned, so coordination with the assignee is recommended.
